Cabernet Franc

Cabernet Franc is a lesser known varietal, and there are only a handful of Napa Valley brands produce and bottle it as such.  Here at Schweiger, we bottle it specifically for our club to have the chance to compare differences in Cabernet Sauvignon, and to see what Cabernet Franc brings to the blending table.  A lighter body style and bit of pepper, with all of the aging capacity of our Cabernet Sauvignon.  Unfortunately, we do not have much of a library for you to choose from here, so snap up a few cases to watch how it develops over time.

VARIETAL PERCENTAGE: 96% Cabernet Franc and 3% Cabernet Sauvignon, 1% Malbec

AGE OF VINES AND SOIL TYPE: 24‐32 year old vines planted in deep volcanic soils at a 2000′ elevation.

AVERAGE HARVEST SUGAR: 25.5 degrees Brix

AVE. FERMENTATION TIME/TEMPERATURE RANGE: 12 days, 58–94 F

FERMENTATION CONTAINER/MACERATION: Open fermentation in small containers, punched down twice a day.

ANALYSIS AT BOTTLING

Alcohol: 14.8% pH: 3.87 TA: 6.1 g/L VA: 0.44 g/L R.S.: Dry

LENGTH/TYPE OF AGING: 28 months in 60 gal Oak barrels: 55% new French Oak,

40% 2–3 year old French Oak.

VINTAGE AND WINEMAKER’S NOTES: We are one of the few growing Cabernet Franc on Spring Mountain and pretty much the only winery bottling it as a varietal (albeit exclusive to our most important customers). It produces a notably lighter aroma and mouthfeel with unique fruit and dried herb components, making it a food pairing fantasy! Our 2016 Cabernet Franc possesses an elegant floral and stonefruit bouquet, delightful acidity, noble gamey‐ness and lingering charm. Notes of cherry, plum, and blackberry are brushed with leather and baking spices that make it fit for a late lunch of dried cherry glazed duck or salmon.
